One Skillet Cheesy Turkey Orzo

INGREDIENTS

  • 1 pound ground turkey

  • 3 tbsp olive oil

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 1 tsp salt

  • ¼ tsp pepper

  • 1 tsp dried oregano

  • 24.5 oz jar crushed tomatoes

  • 1 ¼+ cup water

  • 1 ⅓ cup orzo

  • ½ cup fresh basil, chopped

  • 10 oz ricotta

  • 1 cup shredded mozzarella


INSTRUCTIONS

  1. Preheat oven to 450F

  2. Add turkey and cook over medium heat until browned. While cooking, use a spatula to break the turkey apart into bite sized pieces. Once the turkey is fully cooked, remove from the pan.

  3. To the same pan, add the oil, onions, garlic, salt, pepper, and oregano. Cook over medium heat until the onions are translucent.

  4. Add the tomatoes and water to the skillet.

  5. Bring to a boil and add orzo. Lower to a simmer and cook for 8-10 minutes. You may need to add more water as the orzo cooks to achieve desired consistency.

  6. Remove from heat. Add the turkey back in and the basil and stir to mix throughout. .

  7. Make wells or depressions with the back of a spoon across the orzo mixture and dollop spoonfuls of ricotta into those space. Sprinkle with the mozzarella and bake for 5 minutes.

  8. Change oven temp to broil and broil for 2 minutes more. Serve warm and enjoy!
