Kid-Friendly Chicken Fiesta Casserole

I’m fairly certain that for most of us moms, we are constantly trying to find creative ways to get our kids to eat wholesome meals. I have one kiddo with a great appetite and one who’s pickier than I’d like and would survive on snacks all day if I let him.

I’m also always trying to figure out how to save time in the kitchen either by meal planning, meal prepping, or using healthy pre-made foods (like the rotisserie chicken in this recipe, for example), etc. so that I don’t feel like I’m living in the kitchen!

I love making casserole dishes simple because they are so easy and quick and I can usually hide a bunch of healthy foods without anyone noticing. Serve this dish with any toppings you’d like – my kids really enjoy this by scooping it up with black bean chips, lentil chips, or organic tortilla chips.

Kid-Friendly Chicken Fiesta Casserole

Serves 8
Time: 30 minutes


  • 4 cups Rotisserie Chicken, shredded
  • 2 cups pre-cooked rice
  • 1 cup frozen corn
  • 1 cup black beans, rinsed
  • 1 cup salsa
  • 1.5 cups diced tomatoes
  • 1 tsp. Sea salt or Pink salt
  • 1 tsp. Ground Cumin
  • 1 tsp. Garlic Powder
  • 1.5 cups Cheddar Cheese, shredded


  • Green onions, sliced
  • Sour Cream
  • Guacamole
  • Avocado


  1. Preheat oven to 350 degrees
  2. Add shredded chicken, cooked rice, corn, black beans, salsa,
    tomatoes, and spices together in a large bowl and mix to combine.
  3. Add mixture to large casserole dish and spread shredded cheese on
    top. Bake for 20 minutes or until cheese is melted.
  4. Dish out portion and top with desired toppings like green onions,
    sour cream, avocado, or guacamole. Serve with black bean or lentil chips (optional).

If you have leftovers, turn them into a salad by placing them on a bowl full of green leaf or romaine lettuce topped with cilantro, fresh avocado, and fresh diced tomatoes!
