Perfect to serve alongside holiday meals or to eat on its own! This Festive Napa Cabbage Salad with Ginger Garlic Poppyseed Dressing is loaded with antioxidants and tasty toppings that everyone will love. The homemade dressing is simple, delicious and best of all - sugar free. Napa Cabbage, the base of this salad, has a sweet, crunchy and celery-like taste and is loaded with antioxidants, potassium, and healthy levels of fiber. It’s extremely low in calories and provides an excellent source of folate.

Ingredients for Salad

  • 1 head Napa Cabbage, chopped
  • 2 cups red leaf lettuce, chopped
  • 2 cups green leaf lettuce, chopped
  • 1 small red onion, thinly sliced
  • ½ cup mandarin slices
  • ½ cup dry roasted sliced almonds
  • ¼ cup combination of dried golden raisins, cherries, cranberries & blueberries (or just cranberries would be fine, too)
  • Top with unsweetened coconut chips or flakes (I used Dang brand here, found at Whole Foods or Amazon)

Ingredients for Dressing

  • 1 small knob (about 1 tsp. size) fresh ginger
  • 2 garlic cloves
  • 1 tbsp poppy seeds
  • 2 tbsp Lakanto monkfruit sweetener  (found at Whole Foods, Fresh Market or Amazon)
  • ¼ cup aged Balsamic Vinegar
  • ½ cup olive oil (or avocado oil)
  • 1 lemon, juiced


In a large bowl mix together Napa cabbage and lettuces to form the base of the salad. Add remaining salad ingredients to the top. Place all ingredients for dressing into a high speed blender and blend on high for 1 minute. Drizzle salad with dressing or serve on the side. Enjoy!
